Yes. The Gros Piton Nature Trail takes about two to two and a half hours to ascend and rewards you with panoramic views of the island, the Caribbean Sea, and the Pitons. Our team can arrange the booking in advance.

The Tet Paul Nature Trail is rated easy to moderate and suits most walkers. It climbs like a natural staircase past exotic fruit trees and medicinal plants, and the summit looks out over the twin Pitons and across to Martinique and St. Vincent.

Three trails wind through the resort and you can walk them at your own pace. They pass tropical flora, local wildlife, and views over the surrounding rainforest. Along the way, you meet historic ruins and landmarks that carry the stories and folklore of this centuries-old plantation.

Two. The cascading pools sit at the heart of the resort as three interconnected basins between 13 and 15 feet across, each looking out over mountain scenery. The infinity pool is our newest addition, just steps from 5 Fingers Restaurant, with sweeping views across the estate.

Around the pools, you’ll find rainforest hardwood loungers, bathrooms and showers, and a poolside library stocked with books and board games. If you want a drink or a light snack, pick up the poolside telephone and we will bring it out to you.

Mama La Terre Spa is tucked into one of the quietest corners of the estate, framed by cacao groves and gardens of tropical flowers and fruit trees. Every product used in treatments is made from all natural, organically grown ingredients.

It follows the full journey from bean to bar on our working cocoa plantation. You learn the centuries old techniques, taste as you go, and take part in the chocolate making yourself.

Ripe cacao pods are harvested and cracked open, and the sweet beans inside, which we call jungle M&Ms, go into fermentery boxes covered with boards and banana leaves. They ferment for eight to ten days while the natural bacteria and yeast break the pulp down into cocoa vinegar.

The beans go onto drying trays in the sun for eight to ten weeks. If it rains they have to be wheeled back into the cocoa shelter straight away, because once fermented beans get wet they spoil.

After the first two to three weeks of drying, the beans are coated in a mixture scraped from a young cocoa pod, then an estate worker steps barefoot into the cauldron and dances on them for thirty minutes. It polishes the beans, removes blemishes and makes them easier to shell.

The dried beans are roasted for around forty minutes, cooled, then ground into a coarse mix of nibs and shell. A vacuum separates the shell out, the pure nibs are blended into a fine powder, and that powder is combined with cocoa butter and sugar and mixed for at least twenty four hours.

The chocolate comes out of the machine semi liquid, and is tempered on a large metal surface with two spatulas until it reaches the right consistency. It is then poured into moulds and refrigerated until solid. The finished product is 100% organic chocolate.

Yes. The cocoa powder is 100% cocoa and free from artificial chemicals. The estate itself is certified organic.

In addition to cacao, the estate is home to a variety of citrus trees and tropical fruits, including organically grown green bananas, known as the island’s “green gold”.

Each one is uniquely designed in an authentic plantation style, with madras accents, warm wood floors, rattan furnishings and vaulted, beamed ceilings that echo the property’s colonial heritage. Off white walls carry artwork by local artists, and many bedrooms have four poster beds.

The one bedroom cottages are built for couples wanting romance and quiet, with an intimate layout and a direct connection to the rainforest around them. If you want a private plunge pool and air conditioning as well, choose the One Bedroom Cottage with Pool and A/C.

It began as a 160 year old colonial home in Castries that was slated for demolition. We bought it, dismantled it, moved it here, and rebuilt it using traditional techniques.

Rather than build replicas, Fond Doux salvages abandoned colonial buildings from across St. Lucia and restores them here. Each cottage is furnished with pieces made by local artisans.

On April 22, 1795, this landscape was the site of a defining clash in St. Lucia’s struggle against slavery. Over 1,000 British troops, including Black and white soldiers, marched from Vieux Fort to crush the rebellion.

Flore was a formerly enslaved woman who endured abuse before escaping to join the Armee Francaise dans les Bois. She masterminded the ambush at Rabot.

In the park, you’ll find an interpretation center, educational exhibits, the fortress ruins, the Neg Maron hideout, and a commemorative shrine honoring those who fought and fell.
