Before Fond Doux was a sanctuary for travelers seeking peace among St. Lucia’s southern hills, it started out as a working agricultural plantation over 250 years ago; at its core, it still is. Unlike resorts built purely for tourism, Fond Doux grew organically out of the soil. When the estate expanded into eco-tourism, the goal wasn’t to replace the island’s rich agricultural heritage, but to protect and sustain it. Diversifying into hospitality gave the farm a vibrant second life, allowing traditional cultivation techniques to thrive alongside modern eco-luxury.
Today, when you walk the winding estate paths, you are stepping onto active agricultural land. The fields are alive with a diverse tapestry of crops cultivated using organic practices:
- Green Bananas: Grown on-site as a staple crop and a living link to the island’s farming identity.
- Tropical Fruits: Estate-grown mangoes, apricots, grapefruits, love apples, guavas, jelly coconuts, starfruit, citrus, and breadfruit ripened naturally under the sun.
- Vegetables & Spices: Planted and harvested daily for culinary use.
- Cacao Trees: Cultivated continuously on the estate for over 250 years, with shade-grown cocoa pods harvested directly from historic trees across the 135-acre grounds.

A Living Classroom: Exploring the Estate Gardens
Guests don’t just view the farm from a distance; they walk through it. Guided estate walking tours offer a sensory journey through a living garden where fruit literally grows overhead.
As you wander the property trails, guides point out medicinal plants, native spices, and flowering trees. Depending on the season, you may even sample organic fruits freshly gathered right from the trees by our “Fond Doux Tarzans” along the way.
From Plantation to Plate at 5 Fingers Restaurant
This agricultural dedication comes to life most vividly at our 5 Fingers Restaurant. Here, the farm-to-table philosophy isn’t a modern trend, it’s a natural extension of our estate’s origins.
The green bananas harvested in the morning become the authentic base for traditional dishes by evening. Tropical fruits gathered from the trees sweeten morning juices and desserts, while estate-grown spices season local specialties. By staying at a resort that remains a farm first, guests experience the authentic flavors of St. Lucia, grown right beneath their feet.
If You Go: Fond Doux is a working 19th century cocoa estate set beneath Saint Lucia’s iconic Pitons, a UNESCO World Heritage Site, where restored colonial cottages sit among productive farmland and verdant rainforest. Family owned and operated by the Lamontagne family, the 135 acre estate combines agriculture, heritage, nature, local cuisine, and hospitality, offering an authentic connection to Saint Lucia’s history, landscape, and culture.
