From Bamboo to 5 Fingers
For many years, guests knew the restaurant at Fond Doux as Bamboo Restaurant, a name inspired by the open air dining pavilion built from bamboo harvested on the estate. In late 2024, the restaurant became 5 Fingers Restaurant, giving it a fresh identity while preserving everything that made it special. The name may have changed, but the philosophy remains rooted in the land, the people and the traditions of St. Lucia.

The journey to every meal begins on the estate itself. Fresh fruit, vegetables, herbs and spices are harvested from Fond Doux’s gardens and orchards before finding their way into the kitchen. Seasonal ingredients shape the menu throughout the year, while fresh local seafood and daily Chef’s Specials ensure no two visits are exactly the same. The focus has always been on serving food that reflects the estate and the island.
For 2026, Fond Doux is again put forward in the region’s leading green resort categories, and this is where guests and friends of the estate can help. Public votes count towards the result, so a moment of your time can carry real weight for a small, locally owned property competing beside much larger names.

Authentic Flavors of St. Lucia
The menu celebrates authentic Creole cuisine alongside Caribbean specialities, bringing together traditional recipes, local ingredients and regional flavors. Signature dishes such as Fond Doux Sous Kaye, Fond Doux Veg Pot and Fond Doux Grilled Veg reflect the estate’s own identity, while vegetarian dishes are given the same attention as every other course. Rather than following international dining trends, the kitchen remains firmly connected to St. Lucian food traditions.
